Set owner to cvmfs user by default

With 2.1 repositories, the file catalogs store uid and gid. This is used as file owner on client side, which doesn't make much sense in most cases (CernVM is an exception). The behavior should go back to 2.0 catalogs using the local cvmfs user as file owner.
